The Cooperativa de la Virgen de Esperanza is in the Murcian village of Calasparra, on Spain's Mediterranean coast.
The coop is owned by 160 small local rice growers. Their special rice is greatly absorbent and showcases the flavours of your liquid ingredients. Calasparra rice cooks in about 20 minutes.
You can cook your paellas and rice dishes entirely on the stove top or you finish them in the oven.
