La Leyenda is a producer of cheese in La Mancha, the area that is famous for Manchego.
This is made the same way that a young Manchego would be except with dark veins of black truffle criss-cross the interior of this pretty cheese, infusing yet not overpowering the classic nutty, buttery flavors of a fine sheep's-milk cheese with the warm earthiness of truffle.
Each piece is cut to weigh approximately a half pound and then vacuum sealed.
